The ultimate comfort food is meatloaf. I love this meal in the winter on chilly nights and for leftovers the next day!
Ingredients:
1¼ lbs. ground beef
1¼ lbs. ground pork
3 eggs
2 cups green onions, finely chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
5 garlic cloves, minced
1 tbsp. Worcestershire sauce
1 tbsp. hot sauce
¼ cup half and half
1 small can tomato sauce
1 tsp. pepper
1½ tsp. salt
1 tsp. cumin
1 tsp. cayenne pepper
3 stalks celery, finely chopped
Directions:
In large bowl combine all ingredients with hands.
Preheat oven to 350°.
On large greased cookie sheet or baking dish make into shape you desire and bake for 1½ hours.
I usually remove the meatloaf from pan and add in a small can of beef broth, with a tablespoon of kitchen bouquet. First, add one tablespoon of flour and mix with a ½ cup of water. Beat well and add into the pan to thicken the gravy. Whisk until thick and smooth. Add salt and pepper to taste. Serve over meatloaf.
